Lobster and Salmon Croquettes

These light and fluffy croquettes feature the best of both seafood worlds! With lobster and salmon, these make for a yummy snack, appetizer or main dish. Total cook time: 20 minutes



Breadcrumbs (1 cup)
3 large eggs
Cajun seasoning (1 tbsp)
Crushed red pepper (1/2 tbsp)
Fresh garlic (minced – about 1 tbsp)
Ginger (1 tbsp)
Asparagus (2-3 strings)
1 Medium Green Bell pepper
Canned Salmon (2 cans)
Lobster (2 cups)
Black Pepper (1 tbsp)
1 Medium Onion



  1. Chop your veggies and lobster and combine
  2. Pour your salmon and drain. Then add to your veggie/lobster mixture
  3. In one large mixing bowl, combine and mix with eggs, seasonings and bread crumbs
  4. Once mixture is combined and thick, make small golf ball sized patties by rolling balls of mixture and pat down gently in the center
  5. Place patties in a sauce pan with olive oil (lightly drizzled) set to medium heat
  6. Cook your patties for 2-3 mins on each side or until color is to your liking
  7. Once patties are cooked, remove from heat, let cool and serve!
