Lobster Bisque

This crustacean sensation is a great pallet cleanser for any seafood meal or salad pairing. Sure to be a favorite amongst any dinner guests in search of a tasty soup! Cook time: 1 hour

Leek Vegetable (1/2)
Fennel (1 small)
Celery Stalks (4)
Adult Carrots (3)
Tomatoes (2-3)
Heavy Cream
Black Pepper
Lobster Tails
Seafood Cooking Stock (2 boxes)
Water (2 cups)
Cognac (1 cup)
White Wine (1.5 cups)
Butter (4 tbsp)

  1. Boil about 2 cups of water in a large stock pot
  2. Once water is brought to a boil, add wine, parsley and 1/2 tbsp black pepper and lightly stir
  3. Add seafood stock to pot and stir – then immediately remove and return to a bowl (saving contents for later)
  4. Add 4 tbsp of butter and about 1/4 cup flour to pot and stir for about 6 minutes
  5.  Chop leeks, fennel, carrots and celery and combine to flour/butter
  6. Add cognac and return your water/broth mixture to pot and stir
  7. After 30 minutes, remove veggies and parsley  strings  and grind to small pieces
  8. Return veggies to pot and simmer for 10 minutes
  9. Add cooked lobster tails to pot, let cook to your liking and serve
  10. Enjoy!
