Green beans, Asparagus, and Portobello Mushrooms

Calling all vegetarians! We’ve got a meal that can serve as a side or the main dish. This mix of green beans, asparagus and portobello mushrooms are a great light option to add to the rest of your Easy Comfort Food faves. Total cook time: 15-20 mins

2 cups of rinsed and sliced portobello mushrooms
2 cups of rinsed string green beans
2 cups of asparagus stems, cut in half and rinsed
3-4 cloves of garlic, pealed and chopped
3 tbs of ginger, sliced and chopped
4-5 tbs soy sauce
3 tbs sesame oil
Olive oil
1 tbs black pepper
1 tea spoon crushed red pepper

Heat pan over medium-high heat
Coat bottom of pan with olive oil
Add ginger and garlic & sauté for about 30 sec to 1 min on med heat
Add asparagus, mushrooms and string beans and turn heat on high
Add soy sauce, crushed pepper, sesame oil, & black pepper
Sauté for about 10 mins then put a lid on for about 1 min
Turn off the fire & enjoy!
